Dal Tadka is proof that simple ingredients done well are hard to beat. The tadka (tempering) is what elevates cooked lentils from plain to something truly special — the sizzling spices in hot oil bloom and add an incredible fragrance.
The Tadka is Everything
A proper tadka is done at the end — whole cumin seeds, garlic, and dried red chilli hit the hot oil or ghee and bloom immediately. That mixture is poured over the cooked dal and the aroma is genuinely something else.
